Avocado & Tofu Chocolate Mousse

We talk about not wasting food and exploring fruit that is past its best in our post “How to Reduce Food Waste: Easy Tips for a Greener Kitchen“. This is one of those recipes that really does embrace this concept.

To make this recipe, it’s best to use very ripe avocados, and the dark chocolate beautifully hides any darkening of the avocado flesh. Whenever we shop in Walmart or any other store, we head straight to the shelving where they sell fruit and vegetables that are past their best. It is difficult to beat half price; you get a bargain, and the store doesn’t have to pay so much to dump their garbage.

Avocado & Tofu Chocolate Mousse

Healthy food doesn't have to be boring. If you're a chocoholic like me this might be the perfect recipe for you. On its own or with fruit, my favorite is mango, this is perfect as an the culmination of dinner or even a snack. My wife even suggested using as a spread on toast for breakfast.

Ingredients

  • 2 ripe avocados scoop out the flesh
  • ¼ cup cocoa powder
  • ¼ cup melted dark cooking chocolate
  • ¼ cup soft tofu note 1
  • 1 tsp vanilla extract note 2
  • 1/4 cup pure maple syrup or liquid honey

Instructions

  • All of the ingredients will be added to a food processor and blended until smooth.
  • The chocolate needs to be melted and I do this over a bowl of hot water. To ensure the maximum chocolate gets added I add the avocado flesh and tofu to this bowl and swish it around before transfering to the food processor.
  • Share in small bowls and top with mango, strawberry, raspberry, banana or even a mixture.
  • If you do plan on serving in small bowls its best to do this before the mousse becomes to firm.
  • The mousse stores well in a refridgerator for several hours or even over night.

Notes

Note 1: I like to use soft tofu but 3-4 tbsps of milk of your choice or even whipping cream will create a smoother consistency.
Note 2: Dark chocolate has a beautiful, rich taste, so experiment with the amount of vanilla extract you’ll need. If serving with fruit or Matcha ice cream you may even want to exclude this ingredient.
