Dried Apple & Pear Almond Flour Cake (Gluten-Free)

Here's a simple and delicious Dried Apple and Pear Cake recipe using almond flour instead of wheat flour. It's naturally gluten-free and packed with fruity flavor!
If you're lucky, you'll have fruit trees in your garden. If not, don't despair. You may be fortunate to have neighbours with fruit trees and never harvest all of the fruit. All it takes is a few jars of preserves and people will usually give you free rein to harvest their fruit.

FAQs
What if the dough is dry?

Ways to Fix Dry Dough

  1. Add More Liquid
    • If your batter is crumbly or too thick, gradually mix in 1-2 tablespoons of milk (dairy or non-dairy), apple juice, or water until the dough becomes softer.
    • If using honey or maple syrup, add a little extra to increase moisture.
  2. More Eggs
    • Eggs help bind and add moisture. If your batter feels too dry, whisk one extra egg and mix it in. Plus, it adds an additional amount of protein.
  3. Increase Fat
    • If the dough feels dense and dry, add 1-2 tablespoons of melted coconut oil, butter, or olive oil to improve its texture.
  4. Let It Rest
    • Almond flour and coconut flour absorb moisture over time. If your dough seems dry, let it sit for 5-10 minutes before adding more liquid. It may soften naturally.
  5. Mix in Yogurt or Applesauce
    • Adding 2-3 tablespoons of unsweetened applesauce, yogurt, or mashed banana can make the cake softer and more moist.
