Ingredients

Almond Butter

  • 16 ounces raw almonds 3 Cups
  • ¼ teaspoon salt
  • ¼ teaspoon Optional: ground cinnamon
  • ½ teaspoon Optional: vanilla extract
  • 2 teaspoon Optional: maple syrup or honey

Almond Milk

  • 3 cups water
  • 4 tablespoons almond butter Note 1.

Instructions

Almond Butter

  • Preheat the oven to 350 ℉. Spread the almonds across a large, rimmed baking sheet and toast the almonds for 10 minute. Toss the almonds after about 5 minutes.
  • Let the almonds cool until they are warm.
  • Transfer the almonds to a high-speed blender or food processor. Blend until creamy. This will take time so be patient.
  • Now that it's a creamy texture add the salt and any of the other suggested options. Process again until everything is thoroughly mixed.
  • You may need to process again to get back to the creamy texture.
  • Once the mixture has cooled, you can transfer to a clean mason jar and store in the fridge. It should last up to two week but do, check regularly for spoilage. Better yet. Make sure you only make enough for your needs.

Almond Milk

  • Place all of the ingredients in a blender and process on high speed for 30 seconds or until well blended.
  • There's no need to strain. Simply store in the the fridge, in a large mason jar.
  • It should be used within a couple of days as it does not have the additional preservative chemicals sometimes found in store bought almond milk. Do not freeze.
  • Give the jar a good shake before using the almond milk if it's been left to stand in the fridge.
