Likky Soup-Leek Soup

Likky Soup (Vegetarian Version)

An old West Country leek soup. I checked with Google, and even they don't have a record of this name.
If you liquidize this soup it's good hot or cold.

Ingredients

  • 3-4 medium leeks
  • 1 medium onion chopped
  • ½ cup mushrooms chopped-best to use strongly flavored
  • 4 medium waxy potatoes peeled and chopped
  • 5 cups vegetable or chicken stock
  • 1 tbsp butter
  • Salt and freshly ground pepper
  • Pinch nutmeg
  • ½ cup 35% cream or creamy milk/single cream
  • Parsley or chives chopped for garnish

Instructions

  • Make sure the leeks are well-washed. Soil has a habit of getting inside. Include some of the young green parts. Chop evenly. Prepare potatoes and onion.
  • Chop the bacon and heat in a saucepan. When the fat begins to run, add the butter and allow it to melt. Add the onion and leek. Cook to soften but not color.
  • Add the potatoes and mix well. Slowly add the stock and nutmeg, then bring to the boil. Cover and simmer for 20-25 minutes until all the vegetables are soft.
  • Finally, add the milk or cream and seasoning and serve with the herb garnish.
  • If you'd like to try this as a cold soup, liquidize and chill.
