Portugese Green Soup (Caldo Verde)

Portugese Green Soup (Caldo Verde)

Wondeful tasty soup that's great for lunch or as part of a dinner menu. We have found that it's OK to make ahead of time and warm before serving with some nice crusty bread.

Ingredients

  • 3 tbsp olive oil divided
  • 1 medium onion minced
  • 1 clove garlic minced
  • 6 medium potatoes (yellow flesh) peeled and thinly sliced
  • 8 cups cold water
  • 6 oz chorizo sausage (Note: 1) thinly sliced
  • Salt (sea, kosher, plain) to taste
  • ground black pepper to taste
  • 1 lb kale rinsed and sliced into strips

Instructions

  • Heat 3 tablespoons of olive oil in a large saucepan over medium heat. Add onion and garlic and cook for 3 minutes. Add potatoes and cook, stirring constantly, for 3 minutes. Pour in water and bring to a boil; boil gently until potatoes are very tender. Usually about 20 minutes.
  • Cook the chorizo sausage in a large skillet over medium-low heat until it has released most of its fat, about 10 minutes. Drain off the fat.
  • Purée potato mixture with blender or food processor. Stir in the sausage and season with salt and pepper. Increase the heat to medium, cover, and simmer for 5 minutes.
  • Stir in kale and simmer until tender and bright green, about 5 minutes.

Notes

Note: 1 Traditionally, this recipe used a spicy Portuguese sausage called linguiça, but it is probably not easy to find, so we use Chorizo sausage as a great alternative.
