Ingredients

  • 2 tbsp olive oil
  • 1 onion chopped
  • 400 g minestrone soup vegetable mix
  • 50 g dried lentils
  • 1 litre water
  • Salt/pepper to taste
  • Vegetable stock cube
  • 4 wholemeal rolls

Instructions

  • Heat the olive oil in a heavy based saucepan,
  • Add the chopped onion, and cook for 5 minutes to soften.
  • Add mixed vegetables and lentils, 1 litre of water, vegetable stock cube. Simmer for 25 minutes or until lentils soften.
  • Season with salt and pepper to taste
  • Serve with wholemeal crusty roll

Notes

  1. Normally we like to do everything from scratch but if you’re hungry and need a quick fix then convenience can be a blessing.
  2. Try to source your bread rolls from a reliable bakery. So often bread is highly processed and some so called “healthy” brown breads actually have color die added for effect!
