West Country Celery Soup

West Country Celery Soup

The fertile farming lands of the West Country, England are perfect for growing celery along with many of the ingredients included in this recipe. This recipe is based on an old Somerset recipe dating from the mid-1800s.
One piece of advice is to make sure to use at least one celery heart as this adds a little sweetness to the soup.
One thing about West Country food is that it embraces dairy products especially cream.
